| Vegetarian recipes I recently turned veggie and was wondering if anyone could share some cheap and easy recipes. Can't involve eggs.
Can't be arsed with this Quorn etc shit, I want to do it from scratch. (Other than grow the stuff myself.)
Aye, if you've come across anything tasty and simple geeze a shout.

get a mozzarela and a punnet of tomatoes, cut them into cubes and put in a bowl. add salt & pepper, about 6 torn up fresh basil leaves, 2 tbsp of olive oil and 1 tbsp balsamic vinegar. mix it all together & add some cooked pasta. It'll be kinda lukewarm if you add the pasta right from the pot - you can eat it like this or allow it to cool down.
really simple and tasty.

sainsburys on brand pasta sheets are vegan friendly.
for the sauce I use so good soya milk and cheezly (vegan cheese)
I make my own tomato sauce pure and fresh tomatos mix with added seasoning normally garlic.
for the veg you can pretty much put whatever you want in it, I usually got for aubergines, sweet potato,mange-tout, spinach, peppers, basically whatever I have handy at that moment in time.
preparation time is about an hour
and about half an hour to cook
the only expensive part of the meal is the vegan cheese as it's £3 for a small block and it really is tiny! |

Red pepper
packet of flavoured cous cous (meditteranean/tomato)
goats cheese (or some sort of soft cheese would work just as well, i s'pose)
pine nuts
2 garlic cloves
olive oil
1. cut the pepper in half, cover in oil, and crush a garlic clove into each half
roast in the oven for 10-15 mins.
2.meanwhile make the cous cous (according to the packet). when the cous cous has absorbed the water, add the pine nuts and some of the cheese.
3. take the peppers out from the oven, fill with the cous cous mixture, and top with a bit of cheese/pine nuts and place back in the oven to roast for a further 10 mins (or until cheese has browned).
4. serve with a bit of a basil.
goes lurvely with a bit of garlic bread. |

one cup green lentils
one onion diced
one bottle of cheap red wine
one carrot cut up small
tin toms and half a tube of tom puree
a bulb of garlic (we love garlic) half squished and half cut into thick slices
some oregano/italian seasoning.
soften the onion in some olive oil, add the garlic and cook for a couple of minutes.
chuck in the tin of toms and the cup of lentils. stir up with the tom puree and the herbs. add half the bottle of wine and some water.
all you have to do is gently boil it untill the lentils are ready and the sauce is thick. keep feeding it with the wine untill that is done. the carrots dont take long so you add those when the lentils are almost done to keep em crunchy.
super tasty, even converted the meat eaters!!!
that is enough for about 4 people with spaghetti btw.

A great side dish to something else but I like it as a main meal with a Naan bread or wholemeal pitta bread sliced into dip sized pieces. Yuuummmm
One variation:
Ingredients
400g/14oz canned Puy lentils, drained
½ tsp turmeric
½ tsp mixed spice
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp curry powder
30g/1oz fresh mint, chopped
30g/1oz fresh coriander, chopped
salt and freshly ground black pepper
1 lemon, juice only
140g/5oz Greek yoghurt
Method
1. Place the lentils and spices in a pan and gently heat.
2. When the lentils are very soft, add the fresh herbs, lemon juice and black pepper. Cook for a further 2 minutes.
3. Serve as an accompaniment to a curry or with naan bread. Serve with yoghurt.
