I adapted the recipe as neither Mo nor I like aubergine or courgette.

1 onion
2 handfuls button mushrooms

I was the same but I'd try and be dead sneaky to get rid of my food without anyone knowing, plus I seriously resented that my parents told me that I was wrong when I said I didn't like something so I'm a lot more laid back with my kids than my parents were with me. That said, I'm fairly lucky. Nairn will eat anything, and Findlay only refuses green stuff which can be disguised quite easily.

I wasn't that fussy but if I didn't like something I got the

Actually that reminds me, I've been making risotto recently which both the boys love. You can omit the wine and add more stock if you prefer.

Chicken and Mushroom Risotto

Ingredients:
> 150g cooked chicken
> 2 tbsp olive oil
> 1 onion, chopped
> 2 garlic cloves, finely chopped
> 2 or 3 mushrooms, sliced
> 350g/12oz arborio rice
> 150ml/¼ pint dry white wine
> 1.2 litres/2 pints hot vegetable stock
> 2 tbsp chopped fresh parsley (if you want)
> freshly grated parmesan cheese, to serve


Heat the oil in the biggest pan you own (I use a stockpot) and add the onion and garlic. Fry over a gentle heat for 2-3 minutes, until softened. Add the cooked chicken and mushrooms and fry until browned.
Stir in the rice and coat in the oil. Pour in the wine and simmer, stirring, until the liquid has been absorbed. Add the stock a ladleful at a time while stirring until the liquid has been absorbed and the rice is plump and tender. Add salt, pepper and freshly grated parmesan cheese.

I should point out I rarely manage to get the full 2 pints of stock to absorb, and don't omit the parmesan because it's the one ingredient that really makes the meal.

lol totaly. This is why things like spouts give me the boak now. i would probably do the same with my kids if i ever have any.

This sounds immense, I like courgette and aubergine so would shove some of that in too. Never made it with soya beans before but sounds interesting. Thanks for this!

And I just noticed you served with pasta!

I think I've just found our dinner for tonight.
