Fussy Eaters

I always worry about Devin being a fussy eater and not getting all the nutrients/variety he requires from a diet. So, what with being on holiday just now I've decided that I'm going to make a real effort to cook his (and our) dinner's from scratch.

I thought it would be a good idea to post the recipes that have worked incase anyone else is interested.

So, tonight's offering....Fish Cakes.
(serves 2, making about 8 fish cakes in total)

225g (8oz) fish (I used haddock but you could use cod, hake or salmon)
2 tbsp spring onions, finely chopped
handful of parsley, chopped
40g (1.5 oz) frozen peas
40g (1.5 oz) frozen sweetcorn
salt and pepper
beaten egg
2 large potatoes, peeled and grated
veg oil
butter

Cut fish into small pieces. Mix in spring onion, parsley, peas, sweetcorn and season with s&p. Add enough egg to bind mixture.
Squeeze water out of grated potatoes.
Form fish into balls and roll in the potato to give a fairly thick coating, slightly flatten balls and fry in oil and butter until crispy and golden.



Dev, who wont eat fish other than tuna or peas/sweetcorn/green things, wolfed these down.

Chicken Burgers
(recipe makes 8 burgers)

2 chicken breasts (roughly 275g/10 ozs) finely chopped or blitzed roughly in food processor
1/2 small onion, finely chopped
a handful of parsley, chopped
2 tablespoons breadcrumbs
1 small apple, peeled and finely grated (squeeze to get rid of excess liquid)
1/2 beaten egg
1 tbsp oil

Mix all the ingredients together (except oil).
Form into about 8 balls, flatten balls slightly to make burger shape.
Fry in oil until golden brown on both sides.
Serve (the tomato sauce in the picture is also home made and goes brilliantly with the burgers)

Again, he-who-wont-eat-chicken loved these.

excellent ideas, i've a few homemade recipes that I've made to convince the boys to eat stuff they nromally wouldn't, I'll post them up when I get a chance.

Pizza Potato

1 large baking potato
handful of button mushrooms, sliced
1 medium sized tomato, de-seeded, chopped finely
mozzarella (about 40/50g) grated
cheddar (about 25g) grated
splash of milk
pinch of oregano

Bake potato (I did mine in the microwave)
Scoop out potato and mash with mozzarella and milk
fry mushroom for 2 minutes, add oregano and tomato and fry for another 3 minutes
mix in with mashed potato
filled hollowed out potato skin with mixture
cover with cheddar
bake in oven (180 degrees) for about 15/20 minutes.

I made ratatouille tonight...Devin was supposed to eat it but he went to a friend's for dinner instead. He would have loved it had he been here to eat it.
